1 16 oz pkg. dried lentils, sorted and rinsed
2 cans chicken broth
1/2 onion, chopped
2 stalks celery, chopped
2 carrots, peeled and chopped
2 cloves garlic, crushed
2 tsp. dried basil
1 tsp. salt
dash of cayenne pepper (optional)
1/2 pkg. angel hair pasta.
parmesan cheese

Directions:
Directions:
Place rinsed lentils and chicken broth into a soup pan. Add water to cover and
bring to boil. Sauté onion, celery, carrots and garlic in olive oil until almost
tender. Add vegetables and seasonings to the lentils and broth and bring back to
boil. Cook 45 minute to an hour, or until the lentils are tender. In the meantime
cook pasta according to package directions. Drain the pasta just before serving.
Place the soup in each bowl and then place 1/8 cup (I really never measured
this, it is just what will fit in my tongs) cooked pasta in the center of each bowl of
soup. Top with parmesan cheese. Serve with garlic bread.
