3 cups dry pinto beans
2 cans chicken broth
2 tsp. dried mustard
1/4 tsp. garlic powder
1/4 tsp. cumin powder
1tsp. salt (more or less to taste)
dash of cayenne pepper (or substitute a whole jalapeņo cooked in the beans, but
taken out before serving)
1 pkg. beef smoked sausage cut into bite size pieces

Directions:
Sort pinto beans taking out any rocks or pieces of dirt. I think you are supposed
to soak overnight, but I almost never plan ahead enough to do this and the quick
method on the back of the package works great (Bring large pan of water to a
boil, pour in beans and let them soak for 1-2 hrs then rinse.)
Add beans, broth, and seasonings into a crockpot, cover with water and cook on
the high setting. If I am serving these for lunch, I put them on the night before
and for supper I put them on before I leave the house in the morning.
Add the sausages 1 to 2 hours before serving and continue to cook on high
setting. Granddaddy always served them with saltine crackers and that is the
best way, but you can also serve with corn bread or over rice.
