1 bag green lentils (about 2.5 cups), rinsed and sorted
1 onion, diced
4 garlic cloves, diced
4 carrots, chopped
4 celery stalks, chopped
salt, pepper to taste

Directions:
Directions:
Place onions and garlic and 2 TBS. olive oil in large stock pot. Saute on medium-low until softened and golden, about 5 minutes. Add carrots, celery, lentils and 6-8 cups water (depending on how much liquid you prefer). Bring to a light boil for 20 minutes. Reduce heat to low, and simmer at least an hour. Add salt, pepper to taste.

You can add anything you'd like to this -- we've tried Indian spices, potatoes, roasted butternut squash, diced tomatoes, spinach, kale. We like to serve with cheese quesadillas and salsa.
