Ingredients:  
400 grams of spaghetti (or other pasta you like)
250 grams pancetta diced (is simlar to bacon but not smoked or sugar cured)
500 grams fresh tomatoes diced (or can tomatoes, petite cut)
150 grams pecorino cheese (substitute for Pecorino is parmesan, Asiago, or Grana Padano cheeses)
red peppers (as you like)
olive oil

Directions:
Directions:
1. Fry the pancetta in oil, put and red peppers
2. In the meantime cook the pasta according to instuctions on package
3. Drain the pasta
4. Mix all together and the spaghetti all'amatriciana is ready.
5. Do not let the spaghetti sit - eat at once
