2 lbs chicken thighs
3 eggs
1/3 cup hot water
1/2 cup hot sauce, your choice
2 Cups Buttermilk
2 Cups self-rising flour
Salt and Pepper
Garlic Powder
Oil, for frying, I use canola, vege or peanut

Directions:
The night before, combine buttermilk, hot sauce, salt, pepper and garlic powder, whisk together and pour in Ziploc bag, add chicken thighs.
Let refrigerate overnight, turning bag a few time to evenly coat chicken.
30 minutes before frying pull out chicken, let sit.
In a shallow bowl, mix together, flour, salt pepper and garlic powder, toss with fork.
In a small bowl, whisk eggs together.
In a large cast iron skillet, pour 1-1/2 inches of oil in pan, turn heat to med-high.
Make an assembly line, chicken, eggs, dry mixture, extra plate.
Turn chicken in eggs, coat evenly with flour mixture, shake off excess, and place on plate.
Depending on size of your pan, place 4-5 pieces of chicken in oil, DO NOT OVERCROWD PAN, that will bring the temperature of oil down.
Fry for 15 minutes each side.
Line cookie sheet with paper towels, place fried chicken on towels, and put in oven on warm while you fry the rest of the chicken.
Serve with your favorite side dish, I like mashed potatoes and chicken gravy
