1/2 stick margarine
1 1 lb package carrots, chopped
1 stalk celery, chopped
1 large onion, chopped
3 14 1/2 cans Swanson's chicken broth
3 10-oz cans cream of potato soup
1 lb Velveeta cheese (I use less)

Directions:
Directions:
Saute carrots, celery, and onion in margarine. Add chicken broth. Simmer 30 minutes or until vegetables are tender. Add potato soup and cheese. Simmer 10 minutes, stirring often so cheese doesn't sink to the bottom and stick. Add sour cream if desired.
