1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 oz. red food coloring
1 tsp. vanilla
2 tsp. cocoa
1 tsp. salt (sift salt & flour together
1 c. buttermilk
2 1/4 c cake flour
1 tsp. vinegar

Directions:
Directions:
Cream shortening & sugar then add eggs. Make paste of food coloring & cocoa and add to mixture. Add buttermilk, alternately with sifted flour and salt. Add vanilla. Put soda in vinegar, but hold over bowl, as it foams. Then add it to the mixture, blending rather than beating. DO NOT use a MIXER. Pour into 2 - 8 or 9 inch pans. Bake at 350º, for 30 minutes. Cool on rack. Then split each layer to make four layers.
Frosting :
3 T. flour, 1 cup milk, 1 c. sugar, 1 c. butter, 1 tsp. vanilla.
Cook flour and milk together until thick, stirring constantly. Set aside to cool completely, and cover to prevent film forming on top. Cream sugar, butter, and vanilla until fluffy then add to cooled milk/flour mixture. Mix until well blended. If using beater, use at slow speed. The consistency should be a pale yellow in color. Frost in between each layer and then frost top and sides.
