1/4 c. Crisco shortening
1 c. sugar
2 eggs, separated
1/2 c. milk
1 1/2 c. flour
2 tsp. baking powder
1 tsp. vanilla
1 tsp. salt

Topping:
1/2 c. brown sugar
1 tsp. cinnamon
1 T. flour
2 T. melted margarine

Directions:
Directions:
Preheat oven to 350º.

Separate eggs, placing yolks in medium bowl and whites in smaller mixing bowl.

Add shortening and sugar to medium bowl and mix until light and fluffy. Add milk, flour, baking powder, vanilla and salt and mix well.

Beat egg whites until still peaks form. Fold whites into batter.

Pour batter into 9x13 or 8x12 pan (depending on how thick you want the coffee cake). Combine topping ingredients and sprinkle over top of cake.

Bake for 25-30 minutes or until toothpick comes out clean.
