1 1/3 c flour, divided
1/2 c sugar
1/2 c buttermilk
1/3 c vegetable oil
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg
1/4 c firmly packed brown sugar
1/4 c (1/2 stick) butter, softened
1/4 c chopped walnuts
2 tsp cinnamon

Directions:
Directions:
Preheat oven to 400º. Coat 9-in round cake pan with cooking spray.

Cake:

Combine 1 cup flour, sugar, buttermilk, oil, baking powder, baking soda, salt and egg in mixing bowl. Beat until blended. Pour batter into pan.

Streusel Topping:

Mix remaining flour (1/3 c), brown sugar, butter, walnuts and cinnamon in small bowl with fork (or use hands) until mixture is crumbly. Sprinkle over batter.

Bake until toothpick inserted in center comes out clean, 25-30 min. Best served warm.

(I always double this recipe and put in 9X13 cake pan, 35-40 min.)
