1 cup of rice
1 small onion chopped
1 can consommé
1 can beef broth
1 lb. fresh sliced mushrooms
1 sm. can of water chestnuts
6 pork chops
2 Tbs. butter
Salt & Pepper

Directions:
Directions:
Salt and pepper pork chops and brown in butter or oil. In a 9x11 pyrex, add rice, mushrooms, onion, and both cans of stock. Place pork chops on top. Cover and cook 1˝ hours at 325.

Note: the slower the pork chops are cooked the more tender they will be.˝˝

I call this Toody's pork chop casserole. This is one of the first dishes Toody ever introduced me to when I came into the Osteen Family. I'm sure she served this at her Thursday lunches.
