3/4 cup quinoa
1 1/2 cups water
1/2 a carrot, finely chopped, julienned or shredded
2 green onions, sliced
1/2 a cucumber, seeded and diced
1/2 a red, yellow or green pepper, diced
1/3 cup toasted pine nuts or pumpkin seeds
1 - 19 oz. can black beans, rinsed well
handful fresh basil, chopped
handful fresh parsley, chopped
1/3 cup olive oil
2 tbsp freshly squeezed lemon juice
1 clove garlic, minced
salt and pepper

Bring water to boil in a medium saucepan. Add quinoa, cover and cook about 20 min. or until quinoa has completely cooked and absorbed all the water. Remove from heat. Fluff the quinoa with a fork and cover. Let stand 10 minutes. Transfer quinoa to a large plate and let stand until cool.

In large salad bowl combine the beans, carrot, green onions, diced cucumber, diced pepper, and toasted nuts, chopped basil and parsley and the cooled quinoa. Stir to combine.

For the dressing, in a small bowl whisk together the olive oil, fresh lemon juice, garlic and salt and pepper. Pour over salad and toss well.
