3/4 lb. elbow macaroni
3/4 lb. lean ground beef
1 large green bell pepper quartered and sliced thinly crosswise
1 red bell pepper quartered and sliced thinly crosswise
1 medium onion, diced
1 can (16oz.) crushed tomatoes
1/2 can Ro-tel tomatoes
1/2 cup chili sauce
2 tbsp. distilled white vinegar
1/2 tsp. sugar
1/4 tsp. salt
1/2 cup shredded cheese

Directions:
Cook macaroni by package directions. Meanwhile crumble beef in large skillet over medium high heat. Cook 3 minutes stirring occasionally or until browned. Add red and green bell peppers and onion, saute 3 minutes or until tender. Stir in tomatoes, chili sauce, Ro-tel tomatoes, vinegar, sugar, salt and 1/4 cup water and bring to a boil. Reduce heat to medium cover and simmer 5 minutes. Drain pasta in large serving bowl and toss with beef mixture. Top with cheese. Serve with cornbread or a salad.
