10 c. onions, chopped
1/2 c. olive oil
25 lbs. tomatoes, seeded, skinned and strained
1 1/2 c. brown sugar
1 1/2 c. lemon juice
1 1/2 c. Worcestershire sauce
1 c. Dijon mustard
1/4 c. salt
2 1/2 tsp. black pepper
1/3 c. cayenne pepper

In a very large pot, combine all the ingredients and bring to a boil stirring occasionally.

Fill clean pint sized canning jars leaving 1/2 inch head space. Wipe the rims of the jars and cover with hot canning lids and rings.

Process jars in a hot water bath for 30 minutes.
