3 eggs
1 c. Oil
2 c. Sugar
2 c. Zucchini, grated
3 tsp. Vanilla
3 c. flour
1/4 tsp. salt
2-3 tsp. cinnamon
1/4 tsp. baking powder
1/2 c. nuts, dates or raisins (optional)

Beat eggs until light and fluffy; add oil, sugar, zucchini and vanilla and mix lightly. Sift together dry ingredients and add slowly to other. Place into two greased loaf pans and bake at 325º for 45 minutes
