1 lb. elbow macaroni noodles
1 block white cheddar cheese (roughly about 1/4 lb)
1/2 c. butter ( 1 stick)
2 cloves fresh garlic, minced
3 tbsp. flour
2 1/2 c. half and half
1/4 c. grated parmesan cheese
1 tsp. ground oregano
1/2 tsp. freshly ground pepper
1/2 tsp. kosher flake salt
1/2 tsp. ground nutmeg

Preheat oven to 350º. Boil the macaroni until al dente - you don't want to overcook it. Drain. Cut the block of cheese in half. Grate one of the halves and cut the other into small cubes and set aside. Heat the butter in a saucepan over medium heat add the garlic and cook for about 5 minutes until smooth. Reduce heat to low. Add the half and half a bit at a time, stirring the mix smooth after each addition by the time all the half and half is in the sauce won't be really thick. That's fine. Stir in the parmesan cheese, half of the grated cheese and the seasonings. Taste and add more seasonings if desired. Toss the cooked noodles with the sauce and all of the cubed cheddar. Place in an oven proof casserole dish, making sure to scrape all the delicious sauce into the dish. Top with the remaining cheddar cheese. Bake at 350º for 30 minutes. If the top is not as brown as you like it, turn the oven to 425º or turn to low broil and brown the top for a minute or two. Keep an eye on it.
