1 cup sugar
3 tbsp cornstarch
4 cups sliced rhubarb
½ cup water
½ cup whipping cream
½ cup mini marshmallows
1 3 ¾ oz. instant vanilla pudding
1 cup graham wafer crumbs
2 tbsp sugar
4 tbsp melted margarine

Directions:
Directions:
Combine graham wafer crumbs with sugar and melted margarine. Reserve 2 tbsp into 10x10 pan. Bake for 10 minutes at 350°F. Cool

Cook rhubarb, sugar and water until the rhubarb is soft. Add cornstarch and cook until thick. Reduce heat and cook for 2 to 3 more minutes. Remove from heat. Cool. Whip cream. Fold in marshmallows. Prepare pudding according to directions. Spread rhubarb over cooled crust. Spoon marshmallows and cream over rhubarb. Spread pudding on top. Sprinkle with reserved crumbs. Chill for several hours.
