1- 8 oz. pkg mushrooms
1/4 Cup bread crumbs (for mixture)
(Additional bread crumbs for topping)
1/4 cottage cheese
1 sliver cream cheese
1 egg
Garlic, parsley, salt & pepper to taste
* You can also add a little blue cheese for different flavor

Directions:
Directions:
Clean mushrooms with dry cloth or paper towels.
Break off stems carefully.
Chop 1/2 of mushroom stems, add to rest of ingredients (if too loose, add more grated cheese and bread crumbs).
Mix well.
Stuff each mushroom cap and roll in additional breadcrumbs to cover tops.
Put on baking sheet and drizzle olive oil on top.
Bake 350º for 20-25 minutes.
Serve.
