1 lb. canned salmon or 2 c. flaked cooked salmon
2 c. soft bread crumbs
1/2 c. bottled milk, or 1/4 c. evaporated milk plus 1/4 c. water
1 egg, well beaten
1 Tbsp. minced parsley
1 tsp. salt
few grains cayenne pepper
2 Tbsp. melted butter/margarine/fat

White sauce:
2 Tbsp. butter
2 Tbsp. flour
1/4 tsp. salt
1/2 c. milk
1/2 c. liquid from salmon

Directions:
Directions:
Drain salmon, reserving liquor. Remove skin from salmon and flake.

Combine with remaining ingredients, turn into a greased or oiled loaf pain and bake in a moderately hot oven of 375º, 40 minutes or until firm in the center.

For white sauce:
In saucepan, melt butter over low heat.

Blend flour into melted butter. Add salt.

Continue cooking for 4-5 minutes, stirring constantly.

Slowly pour in milk and salmon liquid, stirring constantly.

Continue cooking slowly until smooth and thickened.

Pour white sauce over salmon.
