1 egg
1 c. sugar
1/2 c. oil
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 c. chopped nuts
1 c. grated zucchini

Directions:
Directions:
Cream eggs, sugar, and oil. Add zucchini; mix well. Blend in dry ingredients, and mix thoroughly. Fold in nuts.

Pour into 1 large or 2 small greased and floured bread pans. Bake at 325º for 1 hour.
