1 1/4 c. sugar
1/2 c. butter/margarine, softened
2 eggs
1 1/2 c. mashed, very ripe bananas (3-4 medium bananas)
1/2 c. buttermilk
1 tsp. vanilla
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts, if desired

Directions:

Preheat oven to 350º. Grease only the bottoms of 2 8x4 inch loaf pans, or 1 9x5 inch pan.

In large bowl, mix sugar and butter. Add eggs, bananas, buttermilk, and vanilla. Beat on medium speed until smooth.

Stir in flour, baking soda, salt, and nuts until just moistened. Pour batter into pan(s).

Bake 8 inch loaves 1 hour; 9 inch loaf 1 hour 15 minutes, or until toothpick inserted near center comes out clean.

Cool 10 minutes. Loosen sides of loaves from pans; remove loaves to cooling rack. Cool for 1 hour before slicing.
