7 C chicken broth
3 Tbsp Butter or olive oil
1 1/4 C fine chopped onion
2lb butternut squash
1 1/2 T rosemary
2 C arborio rice
1/2 C white wine
1/2 C cream
1/2 C parmesan cheese
1/3 C blue cheese (optional)
Fresh spinach (optional)

Directions:
Directions:
Saute onions in butter for 5 minutes, then add squash and rosemary (+ spinach if desired) x 4 minutes. Add rice- 2 minutes. Add wine until evaporated, then hot broth. Bring to a boil, simmer uncovered, stirring frequently for 20 minutes. Rice should be creamy and tender. Stir in parmesan cheese and cream. Salt and pepper to taste. Sprinkle with blue cheese, if desired
