1 lb. pork (loin or fillet), cut into 1 inch cubes
1 t. soy sauce
3/4 c. cornstarch
1/2 red pepper, cubed
1/2 green pepper, cubed
16 pineapple chunks
1 egg white
2 cup oil (for frying)
Sauce:
1 c. water
1/4 c. white vinegar
1/4 c. sugar
1/4 c. catsup
2 T. cornstarch - dissolved in 1/4 c. cold water

Directions:
Directions:
Lightly pound pork with cleaver.
Mix soy sauce, cornstarch, and egg white and coat pork.
Heat oil to 400º Deep fry three times, 2 minutes each time.
Stir fry peppers for one minute.
Combine sauce in sauce pan over medium heat.
Stir until thickened.
Add peppers and pineapple.
Reheat pork, if needed, by frying one minute more.
Serve over rice.
