2 c. uncooked Quinoa
3 c. chicken or veggie broth
3 tbsp. extra virgin olive oil
1 1/2 tsp. fresh mint
1 1/2 tsp. fresh lemon peel
1 1/2 tsp sherry vinegar
3/4 tsp salt
1 1/2 c. cherry tomatoes
1 1/2 c. thin ribbons of radiccio
3/4 c. yellow bell peppers
3/4 c. chopped cucumber
1/2 c. crumbled feta
3 tsp chopped kalamata olives
1 1/2 tsp. scallions or shallots

Cover quinoa with water for 5 minutes and then drain
Boil broth, add quinoa, simmer for 15 minutes or until absorbed
Fluff, cool and combine olive oil and salt to quinoa
Toss veggies and feta to dressed quinoa
That is it!
