1 small chicken fryer (wash thoroughly)
2 carrots, cut up
2 pieces of celery, cut up
a little parsley
1 tbsp. of salt
1/2 lb. of noodles or acine pepe or alphabets

Directions:
Directions:
Bring chicken to boil in a large pot, using enough water to cover chicken. Add salt and remove as much skim on top of water with a small strainer. Lower to simmer, add carrots, celery and parsley. Simmer until chicken is cooked. You may have to add more water while cooking. Always have enough liquid to cover chicken. Cook slowly for at least 1 1/2 hours. Remove chicken and strain soup into another pot. Add some pieces of shredded chicken to soup. Chicken broth may be frozen for later use or you may use half and freeze the rest.

Cook acine pepe in boiling salted water, strain and mix into soup.

You can serve whatever is left of the chicken separately, or you can make chicken salad. I sometimes put it in the oven and brush some barbecue sauce over it. Cook for 15 minutes and serve.
