25 lbs. roma tomatoes, chopped
1 bunch fresh cilantro
4 oz can of jalapeņos, chopped
2-3 extra large onions, chopped
2 c. green chilis, chopped
2/3 c. lemon juice
1/4 c. olive oil
1 T. cumin

Directions:
Directions:
Chop all the vegetables and mix them together. Add the lemon juice, olive oil and cumin. Mix thoroughly.

Place 1/4 tsp. salt in the bottom of each pint canning jar. Fill with salsa leaving 1-2 inches of head space. Once 7 jars are filled, go back and top off each jar with enough boiling water so that each jar has 1/2 inch head space.

Wipe each jar's edge and cover with a canning lid and ring. Process in a hot water bath for 45 minutes.
