1 cup milk
2 bay leaves
2 T butter, unsalted
2 T flour
Pinch salt and pepper
2 Garlic cloves, smashed and minced

In a small saucepan, heat milk and 1 bay leaf, bring to gentle simmer, stirring so it doesn't scorch, keep on low heat/
Make a roux, by melting butter over low heat, let bubble, add equal parts flour and wisk,cook 2-3 minutes. Remove from heat, gradually add milk and whisk vigorously. Return the saucepan to heat and bring to a low simmer, continue to add milk and whisk. Cook 5 minutes until it is thick enough to coat the back of a spoon. Taste for salt and pepper, add bay leaf. To prevent a skin from forming, place piece of plastic wrap directly on top.
Serve with fish, vegetable or egg noodles.
