1 lb. Ricotta Cheese
4 eggs
1/2 - 3/4 cup sugar
1 tsp. almond extract
1/4 tsp. salt.
8" Pie Crust Dough

Directions:
Directions:
Line a 8" Pie pan with pastry and put aside. Heat oven to 375º.
Make filling by mixing all ingredients until well blended. Pour into pie pan. Optional: Weave strips of pie crust dough on top of pie.
Turn oven down to 350º and Bake 'till light brown approximately 40 - 50 minutes until center doesn't jiggle and knife inserted comes out clean.
