1 & 1/4 cups firmly packed light brown sugar
3/4 cup creamy peanut butter
1/2 cup vegetable shortening
3 T. milk
1 T. vanilla
1 egg
1 & 3/4 cups all purpose flour
3/4 teaspoon salt
3/4 teaspoon baking soda
1 cup coarsely chopped unsalted peanuts

1. Heat oven to 375 degrees. Place sheets of foil on countertop for cooling cookies. Combine brown sugar, peanut butter, shortening, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg; beat just until blended. Combine flour, salt, and baking soda; add to creamed mixture at low sped.
2. Drop by rounded measuring tablespoonsful of dough 2 inches apart onto ungreased baking sheet. Flatten slightly. Press 1/2 T. of chopped peanuts into top of each cookie. Bake 1 sheet at a time, 7-8 minutes or until set and just beginning to brown.
