1 pork roast (shoulder or sirloin work well)
2 cans Dr. Pepper
4 heaping tablespoons brown sugar
salt and pepper
2 small cans chipotle peppers in adobo sauce
1 large onion

Directions:
Directions:
Season roast with salt and pepper. Quarter onion and place in the bottom of a glass or stoneware casserole dish. Place roast on top of onions. Cover roast with brown sugar and chipotle peppers/adobo sauce (note: you can control the heat of this pulled pork by removing some of the peppers-- I would use about half of the peppers and all of the sauce if this is your first time using them!). Then, pour the cans of Dr. Pepper over everything. Cover the roast with either a lid or tented aluminum foil and cook on a low heat in the oven (300º or so) for a few hours or until the pork is falling apart. Every hour, I pull out the roast while it is cooking and baste it with the sauce in the dish.

When the roast is done, take the meat out of the dish and "pull" it into shreds. Then, re-add the shredded meat back into the sauce/onion mixture until ready to serve.
