Whole Boneless Pork Loin
1 onion chopped
6 pods garlic chopped
2 cans chicken broth
red pepper flakes
8 roasted green chilies chopped
1 tsp. ground cumin
1 tsp. ground oregano
1/2 bottle chili powder
1 large can hominy (gallon size)
2 tbsp. cilantro chopped
1 large can Las Palmas Enchilada Sauce

Directions:
Directions:
Day before serving: Sprinkle Pork Loin on all sides with salt, pepper and garlic salt; brown pork on all sides & place in slow cooker. Brown chopped onion, chopped garlic add to roast along with chicken broth and 2 cans water. Cook on low all day, shred roast and place in refrigerator until next day. Next day add hominy, 1 tsp. ground oregano, 1 tsp. cumin, crushed red pepper flakes, chili powder, and roasted green chilies, enchilada sauce. Salt and pepper to taste. Cook on low for 2 hours.

Serve with tortilla chips, lime, grated cheddar cheese
