2 Cloves garlic, crushed
1 T. Margarine
2 13 3/4oz. Cans College Inn Chicken or Beef Broth*
1 8 oz. Pkg. Fresh or frozen cheese tortellini
1 10 oz. Pkg. Fresh or frozen spinach, thawed
1 16 oz. Can stewed tomatoes, undrained and coarsely chopped
Grated Parmesan cheese

Directions:
In large saucepan, over medium-high heat, cook garlic in margarine for 2 to 3 minutes. Add broth and tortellini, heat to a boil. Reduce heat; simmer 10 minutes. Add spinach and tomatoes; simmer 5 more minutes. Serve topped with cheese.

* College Inn Lower Salt Broths may be substituted

Hint #1: No matter what kind of broth you get, but more than 2 cans. The tortellini seem to soak it up and I always have to add more the next day.

Hint #2: Instead of stewed tomatoes, I use a can of seasoned tomatoes (they come in small pieces). Gives the soup more flavor.
