4 or 5 potatoes, unpeeled
1 cup chopped onion
1 tablespoon olive oil
garlic
salt and pepper
1 can condensed cheddar cheese soup
1/3 cup grated parmesan cheese
dill or parsley (optional)
½ to 1 cup grated cheddar cheese

Directions:
Directions:
Preheat oven to 425 F. Cut potatoes into 1 inch chunks and place in a greased 9 x 13"pan. Add onions, olive oil, garlic, salt, and pepper and mix well. Bake for 30 minutes, stirring once. Remove from oven and let cool slightly.

Reduce oven temperature to 375 F.

In a medium bowl mix soup, parmesan cheese and dill. Pour over potatoes and mix well. Sprinkle with grated cheddar cheese and bake uncovered for 25 minutes.
