2 C. Swansdown Cake flour
1 C. White sugar.
2 t. Baking powder
1 t. Salt
7 Egg yolks
3/4 C. Water
½ C. Oil
1 tsp. Lemon extract
7 Egg whites
½ t. Cream of tartar
½ C. Sugar
5 Egg yolks
1 Can Evaporated Milk
1 C. Sugar
1 t. Vanilla

Directions:
Directions:
Sift together 2 C. Swansdown Cake flour and 1 C. White sugar.
Add: 2 t. Baking powder
1 t. Salt
7 Egg yolks
3/4 C. Water
½ C. Oil
1 tsp. Lemon extract

Mix, beat the above ingredients by hand.
Beat until stiff and then fold into the above:
7 Egg whites
½ t. Cream of tartar
½ C. Sugar

Melt 1 C. sugar in a pan, then add ½ C. water to make thick syrup, using medium heat.
Leche Plan or Custard layer is made by beating by hand:
5 Egg yolks
1 Can Evaporated Milk
1 C. Sugar
1 t. Vanilla
Line a 13x9x2 pan with syrup. Then add the Leche Plan mixture and then the cake mixture. Bake at 325o for 1 hour.
