1 1/4 C. Margarine, softened
2 C. Sugar
2 Eggs
1 t. Vanilla
1 t. Mint extract
2 C. Flour
3/4 C. Hershey’s cocoa
1 t. Baking soda
˝ t. Salt
1 C. Finely chopped nuts

Directions:
Directions:
Cream margarine and sugar in large bowl. Add eggs and vanilla and mint extract; blend well. Combine flour, cocoa, baking soda, and salt; blend into creamed mixture. Stir in nuts, if desired. Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 350o for 8 to 9 minutes. Do not overbake. Cookies will be soft. Cool on cookie sheet until set, about 1 minute; remove to wire rack to cool completely. Makes about 4 ˝ dozen.
