4 cups dried pink beans (or pinto)
8 cups water
1 ham hock
1 large onion
2 cloves garlic
2 Tbsp spiced chili powder or plain chili
1 can tomato sauce
salt to taste


Directions:
Directions:
Soak overnight in water. Throw out any water that remains and rinse well. Place in large sauce pan along with all the ingredients except the salt. Cook 5-6 hours until beans are tender, then add salt and cook a little longer for the best flavor. Best the next day, especially if you cook them 2 or 3 hours again. If you have never tried pink beans, they have a better bean taste than pintos. You may have to add more water during the cooking process.
