2 lb chuck pot roast, about 2 inches thick
1 clove of garlic, quartered
2 Tbsp oil and 2 Tbsp butter
1 clove garlic, minced
1 small onion, chopped
1/4 tsp oregano
1 tsp rosemary
1/4 tsp thyme
1/2 tsp basil
1/4 tsp allspice
1 tsp salt
1/4 tsp pepper
3 1/2 cups water
2 - 6 oz cans tomato paste
1 lb. spaghetti
grated Parmesan cheese

Directions:
Make 4 slots in roast, insert garlic quarters. Tie meat if necessary to hold shape. Heat oil & butter in large skillet. Brown meat slowly on all sides. Remove meat and lower heat. Add onion, garlic and minces herbs. Cook gently 5 minutes. Be careful not to burn. Mix tomato paste with water and add to pan. Return meat to pan, bring to full boil; lower heat and cover. Simmer slowly 2 hours. Turn meat once. When meat is tender is sauce is thick, cook spaghetti. Slice meat, pour sauce over cooked spaghetti. Serves 6. Serve with green salad and French bread. Good sauce!
