4 TBSP butter + 2 TBSP for buttering pan
2 TBSP all purpose flour
1 1/2 c. macaroni
3 - 3 1/2 c. milk
4 oz. cheddar cheese, shredded
4 oz. Velveeta cheese, cubed
2 tsp. salt
1 c. panko (Japanese breadcrumbs)

1. Boil macaroni, cook completely, drain very well. Set aside
2. Melt 4 TBSP butter, whisk in flour, keep on heat for about 1 minute
2. Slowly whisk in milk, stirring occasionally. Bring to a boil.
3. Take off heat, mix in cheeses and salt
4. Add macaroni to cheese sauce, mix thoroughly
5. Butter baking dish with remaining 2 TBSP butter, fill with mixture, top with breadcrumbs
6. Bake covered at 400º for 30 minutes
7. Broil uncovered until golden brown (5-10 minutes)

Can be prepared the day before and refrigerated overnight. Increase baking time by 10-15 minutes.
