1 c. brown sugar
1 c. sugar
1/2 c. water
1 c. shortening
4 c. flour
3 eggs
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda

1 lb. pitted dates, chopped
1/2 c. sugar
1/2 c. water

Directions:
Directions:
Prepare date filling by cooking the chopped dates, sugar and water in a pan on medium heat until the sugar is dissolved and the mixture is hot. Set aside while making the dough. In a mixer, cream together the brown sugar, sugar and shortening. Add the eggs and vanilla and mix until combined. In a separate bowl, combine the flour, salt, and baking soda. Add to the mixer slowly and beat at medium speed until combined. Using a lightly floured board and floured rolling pin, roll out the dough into an oblong shape about 9" x 13". Spread the date mixture evenly over the entire top of the dough. Roll the dough up lengthwise. Wrap in waxed paper and chill in the refrigerator for 1-2 hours until firm. Preheat the oven to 350º. Remove the chilled cookie dough from the refrigerator. Remove the waxed paper and slice with a sharp knife into 1/4 inch thick cookies. Place them on a greased cookie sheet one inch apart. Bake at 350º for 7-10 minutes until golden brown.

Return the cookie dough to the refrigerator if not baking all the cookies at once. The cookies should go into the oven chilled.
