8 oz. dry egg noodles (equals about 4 c. of dry noodles)
2 tsp. unsalted butter
1/4 c. chicken or milk
1/2 c. sour cream
1 tsp. Dijon mustard
1/2 c. chives, plus extra to garnish
salt & pepper, to taste

Cook noodles according to package directions. Usually 5 to 6 minutes for al dente noodles). Drain the water once cooked and return noodles to pot.

Stir in butter until melted. Pour in chicken stock or milk. Add sour cream, Dijon and chives. Blend till noodles are thoroughly coated. Season with salt and pepper to taste.
