2 tbsp Canola Oil, divided
1 pkg Annabelle Potatoes, cut lengthwise into 1/8" slices
1/2 C Shallots, sliced
1 tbsp ea Salt and Pepper
1 tbsp Thyme, fresh leaves only

Directions:
Preheat oven to 375ºF. Grease bottom of a 8x12" baking dish with 1 tbsp oil. Starting at the short side of the baking dish, layer potato slices upright, slice after slice, until potatoes fill the dish. Slide shallots slices randomly between potato slices, distributing as evenly as possible. Brush tops of potatoes with remaining oil and sprinkle with salt and pepper. Bake uncovered, on middle rack of oven, 1 hr. Reduce oven to 300ºF. Sprinkle thyme leaves over potatoes and cook until tops are crispy and potatoes are tender, about 30 mins.
