2 6-8 oz salmon fillets
1/2 cup dry white wine
2 tablespoons fresh lemon juice
1/4 teaspoon basil
1/8 teaspoon dill
sea salt
white pepper
1 clove fresh minced garlic
dash dill
capers
1/4 to 1/2 cup heavy cream

Directions:
Directions:
Place salmon in fairly large pan w/lid. Season salmon with dill, sea salt and white pepper. Add wine, lemon juice, butter, and additional seasoning of basil, dill, sea salt, and white pepper to taste. Cover w/lid and poach at a simmer stage for approximately 8 to 10 minutes (until the liquid is almost gone). Add cream and capers and simmer until the cream thickens. Plate the salmon and top with cream sauce.
