4 eggs room temp
1 tsp baking powder
1/4 tsp salt
1 cup sugar
juice of 1 lemon or vanilla
1 cup sifted flour
Directions:
Directions:
Put eggs, baking powder and salt in mixing bowl. Beat two minutes on high speed or until light and lemon color. Gradually add sugar while beating for 3 minutes. Add flavouring and flour. Fold in flour slowly, just turn over till moist with spoon. Pour in a cookie sheet lined with wax paper and bake 15 minutes at 400ºF. When done put on a wax paper sprinkled with white sugar or icing sugar as desired and turn up. Jelly roll can be opened any time to add the desired filling.
