1 lb. Zucchini (3-4, depending on size), cut on the diagonal into 1/4-inch slices, freshly ground black pepper, 1/2 cup grated Romano cheese, 1/2 cup bread crumbs, 1 tsp. oregano, 3 egg whites, beaten until frothy, 2 tbsp of safflower oil.

Preheat oven to 325*. Sprinkle pepper liberally over zucchini slices. In shallow combine cheese, bread crumbs, and oregano. Dip half the zucchini slices into egg whites, then coat them evenly with cheese, crumb mixture and set them aside. Heat 1 Tbsp of oil in large ovenproof skillet over medium-high heat. Make sure oil evenly coats skillet. Place breaded slices in skillet and immediately put into oven. After 5 minutes, carefully turn slices over and bake until golden brown, 5-7 minutes, Remove the slices and to a warm serving platter and repeat with remaining zucchini and oil.
