3 cups granulated sugar
1/2 cup light corn syrup
3/4 cup water
1 tsp. salt
1 tsp. vanilla
1/4 cup egg whites (2 average size eggs)
3/4 cup chopped nuts

Directions:
Directions:
Combine sugar, syrup, and water in sauce pan. Cook over moderate heat until boiling, then cover for 3 minutes. Remove cover and cook until hard ball stage (260º). In the meantime, beat egg whites, vanilla, and salt until stiff, moist peaks. Don't over-beat. Beat in hot syrup slowly, pouring a thin stream from a height of 1 foot. High speed, continue beating until mixture will almost hold its shape, but is still glossy. Fold in nuts. Drop by teaspoon on wax paper or pour in pan.
