2 medium eggplant
2 eggs (well beaten)
1 tsp. oregano
1/4 c. melted butter
1 tsp. pepper
1/2 c. flour
1 c. Parmesan cheese
1/2 c. sifted bread crumbs
6 T. olive oil
1 tsp. salt
3 c. spaghetti sauce
Thin slices mozzarella cheese

Wash and dry eggplant, do not peel. Cut into 1/2 inch slices. Sprinkle slices lightly with salt. Place on brown paper and allow to drain 15 minutes. Pat dry and sprinkle with flour. Dip into beaten eggs. Mix bread crumbs with oregano, then dip slices into bread crumbs. Combine olive oil and butter in skillet and heat. Add eggplant slices and sprinkle lightly with salt and pepper. Saute to a medium brown (5 min. each side). Preheat oven to 325º. Oil baking pan and cover bottom with light layer of spaghetti sauce, sprinkle lightly with cheese; place small slice of mozzarella cheese on each eggplant. Spoon another thin layer of spaghetti sauce over all. Bake for 15-20 min.

Use hamburger if desired (better with). To use hamburger, cook 1- 1 1/2 lbs. ground chuck, drain, and set aside. Use the hamburger as an additional layer beween the eggplant and sauce/cheese.
