3/4 Gallon hot water
2 - 16 oz bottles Guinness stout
1/2 pound raw bacon cut into 3 inch pieces
2 onions cut into wedges
1 pound kosher salt
2 T black peppercorns
2 quarts vegetable broth
1 pound honey
1 7 pound bag of ice
1 (15-20 lb) turkey with bag of giblets removed from neck area.
Olive oil for rubbing turkey.

Directions:
Directions:
Combine hot water and salt in 54 quart cooler. Stir until salt dissolves.
Stir in vegetable broth, beer, bacon, peppercorns, onions and honey. Add ice and stir. Put turkey in brine, breast up, and shut lid of cooler and leave overnight.
When ready to cook turkey, pull out of brine, rinse off in sink with water, pat dry with paper towels, rub all over with olive oil and then sprinkle all over with garlic salt. Bacon can be fried and added to the gravy you make. Put turkey in oven and bake per directions on turkey package. You want bird to be 160 degrees in the breast for it to be done. Put a meat probe in the breast and set the temp to 160 so you don't overcook the turkey. Let bird rest 30 minutes before carving it.
