1/2 c. butter
3/4 c. sugar
grated rind of 1 lemon
juice of 1 small lemon or 1 T. Kirsch
2 eggs plus 1 egg yolk, beaten
2 1/2 to 2 3/4 c. flour

Directions:
Directions:
Cream butter, gradually beat in sugar, beating well after each addition. Beat in grated lemon rind, lemon juice and 2 whole eggs. Blend thoroughly. Stir in flour, beginning with 2 1/2 cup. Knead dough with hands until smooth. If too sticky, add remaining flour. Wrap dough in waxed paper for 4 hours or overnight. Roll dough between wax paper to 1/4 inch thick. Cut with cutters, place on buttered and floured baking sheet 1 inch apart. Brush with beaten egg yolk. Bake in 350º oven for 15 min. or until golden brown. Store in tightly closed container. Best taste after 2 days.
