3 lbs small white boiling potatos
Salt
2 T dry white wine
2 T chicken stock
2 T lemon juice
2 garlic cloves, minced
1/2 tsp Dijon mustard
Fresh ground pepper
2/3 cup olive oil
1/4 cup red onion
2 T chopped tarragon
2 T chopped flatr-leaf parsley

Directions:
Directions:
Place potatoes and 2 T salt in pot with cold water, bring to a boil and lower heat and simmer 10-15 minutes until tender when pierced with a knife. Drain and place colander over empty pot, cover with towel, this will steam them for another 15-20 minutes. In a small bowl, whisk wine, chicken stock, lemon juice, garlic, mustard and salt and pepper, slowly add olive oil until emulsified. When potatoes cool, cut into quarters, place in large bowl, pour dressing over them. Gently toss. Add onion, and herbs and S & P to taste. Cover and refrigerate for a few hours. When serving you may need to add more dressing to moisten. Serve cold or at room temperature.
