4 slices bread torn into pieces
1/2 cup chili sauce or ketchup
1 1/2 cups coarsely chopped onion
1/2 cup chopped celery, 1/4" dice
1/2 cup chopped carrot, 1/4" dice
1/2 cup chopped flat-leaf parsley
1/2 cup milk or buttermilk
6 cloves minced garlic
2 T. Dijon mustard
1 tsp. freshly ground black pepper
1/2 tsp. salt (freshly ground sea salt)
4 oz. sharp cheddar cheese, cut into 1/2" cubes
3 large eggs, lightly beaten
1/2 tsp. ground sage
1/2 tsp. dried thyme leaves
1/2 tsp. dried basil leaves
2 lbs. ground sirloin

Glaze:
1 cup ketchup
2 T. Dijon mustard
1 T. brown sugar

Pre-heat oven to 350 degrees. Spread breadcrumbs evenly on a cookie sheet and toast for about six minutes until lightly toasted. Cool. Combine all meatloaf ingredients and gently mix together. Transfer mixture to a greased 9" x 13" baking dish and shape loosely into an oval-shaped loaf. DO NOT PACK TIGHTLY. Combine glaze ingredients and spread over entire surface of meatloaf. Bake 55 to 60 minutes until thermometer registers 160 degrees. Let rest 10 minutes before serving.

I've tried many recipes through the years and this is Skip's and my favorite meatloaf recipe. It's extremely moist with lots of veggies and herbs.
