1 cup chopped onion
2 lbs. yellow squash, sliced and steamed
1 cup milk
1 cup cracker crumbs (25 saltines)
1/2 stick (1/4 cup) butter
1 cup grated mild cheddar cheese
1 tsp. salt
paprika

Directions:
Directions:
Preheat oven to 350º.

Cook onion in butter over moderate heat until limp. Remove skillet from heat.

Add squash, milk, mashing and mixing well.

Stir in cheese, 3/4 cup cracker crumbs, and salt.

Place mixture in 2-3 quart baking dish and sprinkle with remaining crumbs and dust with paprika.

Bake at 25-30 minutes.
